Gochugaru is a Korean red pepper chilli flake, available as a coarse flake or a fine powder. It has a light smoky aroma, a subtle sweetness and a moderate heat that develops gradually.

Gochugaru is an essential ingredient in Korean cooking and is commonly used in:

• Kimchi and gochujang chilli paste
• Marinades, sauces, soups and stews

• Noodles, stir-fries and other savoury dishes
