What are Soya Pieces, Textured Vegetable Protein (TVP)?

Soya pieces (slices, chunks, and mince) are made from soy flour. After the oil is extracted from the soybeans through a process known as de-fatting, the leftover by-product is essentially pure soy flour, which is nutritious and very high in protein. The flour is then dried and formed into various shapes and sizes that can be stored until they’re ready to be used in a recipe. Soya pieces are often used in vegetarian or vegan recipes as a meat substitute.

 

How to Use Soya Pieces, Textured Vegetable Protein (TVP)

(Slices, Chunks and Mince)

Firstly, you need to re-hydrate the soya.

Method 1: Add the required amount of tvp to a pan, (remembering the tvp will swell by 150-200%), cover well with water and bring to the boil, (make sure the tvp has sufficient water to absorb), allow the tvp to boil for 4-5 minutes, until they expand and soften. Once they have expanded and softened strain off any excess hot water and run under cold water to cool the tvp so it can be squeezed gently by hand or placed in a food strainer and pressed lightly like a sponge to remove the excess water.

 

Method 2: Add the required amount of tvp to a bowl and cover well with freshly boiled water, (make sure the tvp has sufficient hot water to absorb), cover and leave to stand for 20 minutes, until they expand and soften. Once they have expanded and softened strain off any excess water and run under cold water to cool the tvp so it can be squeezed gently by hand or placed in a food strainer and pressed lightly like a sponge to remove the excess water.

 

Method 3: Tvp can be added directly into a recipe which has a lot of liquid, i.e., Stews, Chilli Con Carne, Bolognaise and Curry Sauces, so the tvp can soak up the delicious flavours and juices.
