White Pepper comes from the pepper berry, the berries are left to ripen until past the point where they would be harvested for use as black pepper and are picked as the color begins to turn from green to yellow/orange. After picking, they are soaked in water for several days until the black outer hulls come loose and then the white centers are then dried in the sun. White pepper has a milder, more delicate flavour than black pepper because it contains less piperine, the volatile oil that gives pepper that characteristic flavour, mainly used in dishes that are light in colour like cream based soups, sauce, mayonnaise, quiches, casserole’s and pies (fish, chicken).
