Black Pepper is one of the world’s most popular spices, its robust piquant flavour and aroma will provide a big lift to any meal. Pepper comes from a perennial woody climbing vine (Piper Nigrum), native to South Western India, but is now cultivated worldwide, it grows to a height of 2-5 metres and uses surrounding trees and structures to support itself, the green unripe fruits are picked and cooked briefly in hot water both to clean and prepare them for drying, after drying in the sun for several days the fruit shrinks and develops a wrinkled black outer layer to become the black peppercorn, then the peppercorn can be milled to the required size, etc, cracked, coarse, fine.
